The Danish cocktail culture started around the same time as the Nordic food scene started to develop and made its entry to the world.

In the search for their own identity, bartenders got inspired by the Nordic chefs seeking local produce and flavors. After opening their minds and their guests palates towards this, a new approach to cocktails was born.

Keywords for Ruby, is to be inspired by the ever changing seasons of Copenhagen which makes the guests crave new flavors and innovations, being able to use the best ingredients in season.

Looking upon the cocktail as a creation of its surroundings to make the exact spirit shine in a new and different way, with a link to the classic cocktail culture.

This year at Tales of the cocktail®, Ruby will be joining creative forces with PDT and Cure for a memorable experience of Nordic inspired thinking, to create cocktail interpretations of their menus.
